What can you make that is easy to make and pleases a crowd? In my house it pretty much always includes pizza, burgers, and tacos. That last one we could eat 6 days a week and everyone would be in heaven. But, even I get tired of eating the same old thing. So to make a change that everyone could agree with I decided to make Quesadillas.
Now stay with me here. It is similar to tacos in that it has a tortilla shell and cheese. What you fill it with is your choice. I usually put just cheese in mine and top it with everything that goes in a taco. This weeks Foodie Friday is going to be about just that.
A Quesadilla Bar
First the ingredients:
- 8 – 10 Tortillas (I love the organic tortillas from Costco)
- 1 package Cheese (I love Chihuahua cheese, but you can use what you like most)
- 1 Lb. Beef / Turkey/ Chicken strips / meat alternative (like Beyond Meat)
- 1 small tub Sour Cream
- Taco Sauce / Hot Sauce
- Tomato
- Lettuce
- Jalapenos / Green Chilies
- Avocado
- Anything else you normally put on your taco!
Tools:
- Bowls (6 or more, depending on the number of toppings)
- Spoons, Forks, and/or Tongs (to get the delicious toppings on your quesadilla!)
- Pan to cook the quesadilla and/or your choice of meat
- Knife to cut the quesadilla into wedges
Now to make the Quesadilla bar:
- Get out several bowls to place each topping in. I placed the following into bowls after prepping them: Cheese, sour cream, tomato (diced), lettuce (cut into strips and halved), jalapenos (diced or sliced), and avocado (sliced).
- Prepare the meat or meat alternative as directed, place in a bowl.
3. Depending on the type of tortillas you purchased, you may have to cook them first. The ones from Costco are that way. And they are VERY tasty. If they are just normal cooked flour tortillas. Just place them in the warmed up pan and place the cheese on half and fold. Leave them in the pan until the cheese is melted. About 2 minutes on low to medium low (depends on your stove).
4. Once the quesadilla is complete, place it on a plate to cool and cut into 4 pieces. Place the toppings you want on each piece and enjoy!
